Quick and Easy Side Dish: Green Bean Bundles

I found this recipe on the internet several months ago, and it has quickly become a family favorite. I made these the other night and the entire pan disappeared almost immediately! It’s fast, easy, and tasty.  It’s also a great way to get kids to eat their veggies…wrap them in bacon, of course!

You simply toss fresh green beans with olive oil, salt, pepper, garlic powder, and brown sugar. Wrap about 5-7 green beans in half a slice of turkey bacon (you can use pork bacon too, just partially cook it first.) Place the bundles in a roasting pan sprayed with PAM, (make sure the loose ends of the bacon are tucked underneath) drizzle with a little more olive oil, and throw in a few chopped onions.  Cook for about 15-20 minutes…depending on how well done you like your beans..in a 350 degree oven.  There are plenty of variations of this recipe, but this works for us. Enjoy!
